100% Chardonnay from the Celeste vineyard, Whitlands, King Valley, Victoria, planted and still owned by the great Dr Jim Hardie. We have been looking after this vineyard for 4 years now and have gradually seen its exciting return to form after some years in the wilderness. Managed organically with only copper and sulphur sprays.
Due to a combination of smoke and kangaroos/deer pushed into our vineyard by the fires, yields were tiny. Subsequently only a single barrel (2 year old French barrique) was made, but a tasty one! After fermentation the wine was left on solids for a further 2 weeks before being racked off gross lees. The wine was then left in oak for 9 months including partial malolactic fermentation.
The wine was then racked to together into stainless steel, then hand bottled under cork, unfined and unfiltered. 242 bottles.
Candied lime zest, lemon myrtle, bircher muesli with honey and vanilla. Lively acidity which drives the palate, fresh and vibrant with serious length and complexity.
