The golden ratio is fascinating. It underpins the fibonacci sequence (1,1,2,3,5,8,13...), can help explain the dimensions of the Great Pyramid of Giza, the pattern of branches on a tree and the spirals on a pine cone. It can explain patterns in the stock market and is found in the art of Salvador Dali and the music of Debussy. For the bible-y or Indiana Jones types, the Ark of the Convenant has the dimensions of 2.5 by 1.5 cubits (~1.6666). If you don't find all this amazing then you have to have a good hard look at yourself. I'm 100% positive that this is amazing.

Production: Wild fermented with as much whole berry as possible in small open vats at our mountain winery in Whitlands. Twice daily gentle hand plunges throughout its maceration time with fractions pressed off over the course of 18 days. The ruby rosé portions and the more savoury longer skin contact portions were blended together post-ferment to make a delightfully vibrant light red. Aged in old French oak for 6 months and then bottled unfined and unfiltered with a small addition of sulphur.

We normally steer away from the following comment but... real rosso di montalcino vibes with this one. Rhurbarb, raspberry rock and peach skin on the nose sets you up for a berry compote palate with a real tacky tannin (take "tacky" anyway you want) and crunchy acid line. I hesitate to say to you that you have to have this cold, it was originally made to be chilled back in the day, but this one says more 12-14°C. Shit the wank just continues. What's happened to us?
Enjoy with smoked trout on untoasted black bread, or haggis, no tatties - unless they aren't too buttery - with a homemade tomato sauce or chutney.
